Herb sauces are one of my favorite categories of sauce. I say category because they’re really customizable. You can take almost any fresh herb, some olive oil, and some form of acidity, and salt and blend it into a sauce. You can add in onions, garlic, chile peppers, nuts, seeds, or even hard cheeses as optional other components.
This is just one example that I love as a slightly spicy, versatile option. Feel free to use this as a starting point and then play around with different variations.
Ingredients
- 1 bunch parsley
- 1 bunch cilantro
- 2 cloves of garlic
- 2 serrano or jalapeño peppers
- zest + juice of 1 lime
- salt
- olive oil
Process
Trim just the tough bottoms off the herbs.
Add the herbs, garlic, peppers, lime, and a big pinch of salt to a blender.
Add in about 1/4 cup of olive oil, and blend. Add more oil as needed as you blend to get a nice consistency like the one in the photo.
Taste and adjust with more salt or lime juice until you’re happy with the taste.
